Blueberry Pie
We usually make this pie in the summer, when fresh Maine blueberries are available, but frozen blueberries can also be used (don't thaw them out). Wyman's is a good brand for frozen.
Ingredients
- Pastry for 2-crust pie See recipe here
- 4 cups Maine blueberries (fresh or frozen)
- 1/2 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 tablespoon butter
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400 F.
- In a large bowl, mix sugar, flour, salt, nutmeg, and cinnamon together.
- Add blueberries and toss until they are coated.
- Line a pie plate with pastry. Fill with the blueberries. Sprinkle lemon juice over top. Dot with small pieces of butter.
- Put top crust on and press edges together to seal. Cut 3 slits in top. Brush top with heavy cream.
- Bake at 400 degrees for about 45 minutes or until top is brown and juices are bubbling slightly through the slits.
